The name was given in memory of an ancient Italian dish, precisely from Abruzzo region, where it is traditionally prepared on May 1st, with the advent of spring. The dish consists of a rich soup, made with the remains of winter food supplies. The stocks were made by the skilled hands of the ancestors with the collaboration of the whole family and handed down from generation to generation.
The history tells us that even for the ancient Romans it was customary to prepare this dish to be shared with the people as a sign of conviviality.
Today the tradition does not change: May 1st is celebrated with this soup, in memory of the past winter and with the hope of a fruitful spring.
