The Sale Camargue is a salt crystallized on the surface of seawater, which is skimmed by hand and dried naturally for months. Fleur du Sel melts in contact with liquid and heat. Depending on its origin and vintage, it has a fine or pronounced taste. It can be used for grilled meats, fish, raw vegetables, and court bouillon (broth for fish). It does not just heat up or spice up food like spices, but it soaks in the food, lets the juices drain and soaks up the water.
It also removes bitterness from foods and supports fine flavours. Tip: A pinch of Camargue Salt on sliced strawberries or melons enhances the flavour.
